Veracruz, Ver., 2 de febrero de 2017.- Mejor conocida como “la güera”, la señora Elia vende tamales en la esquina de la calle Lerdo, en el centro de la ciudad de Veracruz y este día sus ventas se incrementaron, pues todos quisieron tamales de rajas, de elote, de masa, rancheros, cernidos. Ella tiene para todos los gustos.
“En un día como hoy hago más de 500 tamales y todos se venden. Los que más llevan son los de masa. Me levanto desde las cinco de la mañana a preparar, porque todo se vende” contó.
Para prepararlos hay que tener paciencia y sazón. Irma es maestra de cocina y hoy les enseñó a sus alumnas a elaborar tamales cernidos vegetarianos. A un kilo de masa agregó un cuarto de manteca, 100 gramos de mantequilla, una cucharada de royal y un cubo de consomé, así los preparó.
En ningún país existe tanta diversidad de tamales como en México. Cada región y estado tiene ciertos tipos de tamales, tantos que su variedad se calcula entre 500 y cinco mil en todo el país.
Los tamales son parte de nuestra alimentación. Desde tiempos prehispánicos era comida de los nobles, de los sacerdotes en ceremonias especiales de ayuno y era colocado también en las ofrendas a los dioses. La palabra tamal viene del náhuatl “tamalli” que significa envuelto.
